Vinification: Grapes were pressed whole bunch and the juice was taken to old French oak for spontaneous fermentation. Colombard and chenin blanc were fermented separately. Wine spent 9 months on primary lees before bottling in October 2020. No enzymes or finings were used. The chenin blanc is from our neighbouring farm, Remhoogte, and the block directly overlooks the river from the opposite bank to our colombard.
Tasting notes: Bruised apple on the nose, white fruit flavours follwed by delicate spiciness. Fresh palate of chenin blanc complementing the colombard well. A very drinkable wine suited for any occasion. Pair with a fresh nectarine & haloumi salad, seafood spread or ice cold by itself.
