Vinification: Natural ferment; 50% whole bunch and 50% destemmed. Lightly stomped with feet and pressed through once a day. A gentle touch and minimal handling keeps the naturally bold tannins soft and rounded with the focus on the exceptional fruit. Lightly pressed after fermentation and aged in older French Oak for 10 months. No finings were used; minimal SO2 before bottling. Certified organic.

Tasting notes: Unique nose of mixed black & red berries followed by spices and a hint of Kalahari veld. Tannins well balanced on the lengthy palate, soft and rounded – not what you’d expect from a young tannat. Beautiful full flavour of black fruit followed by tobacco leaf, supported by a herbaceous freshness characteristic to Prieska. Pairing suggestion: kudu fillet with red wine jus and potato gratin with thyme and rosemary/lamb shanks with mash and seasonal veggies/eggplant parmiggiano.
