Vinification: Grapes were pressed whole bunch, left to settle overnight and racked to old French oak the next day. Spent 9 months on primary lees before bottling in October 2020. No enzymes or finings were used.
Tasting notes: Classic viognier aromas, white fruit and mango flavours followed by floral perfume. This wine has incredible energy and tight coiled fruit flavours with surreal freshness. Great aging potential. Serve with Asian pork dished or fresh caught line fish.
